Post 520: Saturday Brunch Extraordinaire!

A new early morning cycling adventure to tour around the inner city paths of Richmond, VA was a delightful way to begin Saturday. Up early, cycling by 8:30 AM, and exploring neighborhoods, hill climbs, riverside views, and city streets. Topping these challenging 18 miles with a mid-morning brunch was the perfect idea and met with much appreciation at the Galaxy Diner in the Carytown area of Richmond, VA. This was by far one of the best breakfast burritos I’ve ever had (actually a take on Huevos Rancheros): two eggs mixed with hash browns, black bean burger, fresh veggies and salsa. An explosion of flavors in every bite and a must try if you’re ever looking for a diner breakfast experience!


Post 519: Blackened Salmon Chophouse Salad

If you ever venture to Myrtle Beach, SC, do check out the Carolina Roadhouse. This was a Trip Advisor top choice recommendation when I queried this for best salad. Little did I realize how right they were when the waitress and I decided to create a twist on the house chop  salad and add a piece of blackened salmon. Both extraordinary in preparation and presentation and accompanied with homemade honey mustard and hot bacon dressing. Unbelievably good and less than 20.00. A definite new favorite!

IMG_3704.JPG….as the friend who treated me to this delicious lunch for a belated birthday. This at Ninja Hibachi in Richmond, VA and their yummy danger roll. Such a roll includes shrimp, spicy kani, avocado, a crunchy topping and a spicy mayo. Really nice!

Post 516: A Salute to St. Patrick

img_2931.jpgMost St. Patrick’s Day celebratory meals are full of the green and my dining experience last night was all of that and much more. A beginning with some native spirits such as Paddy’s, a Guinness infused pork roast and cabbage, a Guinness infused Irish Stew, homemade Potato pancakes and, the crowning finish – this amazing mint homemade Gelato ice cream sandwiched between two delicious brownie cookies. Amazing to say the least and a fitting salute to the Irish traditions.IMG_2945

Post 515: NYC’s Red Rooster

IMG_2716.JPGI was first introduced to Chef Marcus Samuelson while reading his book, “Yes Chef” on the way to a 2013 education conference in Tobago, West Indies. My colleague was the catalyst for this fortunate introduction and I’ve been a fan of his ever since. I purchased one of his cookbooks in 2015 and was even more connected to his amazing culinary talents. Yesterday just brought this all to a wonderful “belated” birthday celebration at his famous restaurant in Harlem, The Red Rooster.

The rich colors, fragrant aromas, use of light across the restaurant, smiling faces and engaging wait staff immediately invite one to enter into what promises to be a transformative dining experience. My friend and I ordered the “choice of three” from the daily lunch menu and were delighted with the selections. We began with an amazing sweet potato and apple soup, followed with main courses of mac/cheese and collards as well as Swedish meatballs atop braised cabbage and roasted potatoes. These accompanied by an amazingly dense slice of homemade cornbread filled with rich flavors and the texture of lightly infused kernels of cooked corn. The grand finale, three delicately presented doughnut balls filled with a warm mocha chocolate and served alongside an amazing light but rich dollop of buttercream. All bursting with flavors and heartening the eager foodies to want for much more.

If you ever travel to NYC, most definitely make this a planned destination. Reservations suggested and leave lots of “interior” room to indulge. Look for the smiling face of the waitress, “Sunshine” — she will just add to your wonderful dining experience.

Post 514: Gourmet Winter Veggie Soup

img_2518This recipe began from an inspiration. I just took what I found and “doctored” the ingredients. So, this is a chicken base with some tomato paste and includes white and sweet potatoes, carrots, roasted kale, onions, garlic and orzo. I used a range of seasonings from salt, pepper, ancho pepper, red pepper, smoky paprika, oregano and middle eastern seasonsings.  Adding a dash of some open red wine and some olive oil just added to the rich broth. Great for nursing a case of laryngitis!!
